Buy a Whole Hog!

This means somewhere between 130 and 160 lbs of meat. You choose the ‘cuts’ on the cut sheet that gets submitted to the USDA inspected slaughter house or have me make the choices after getting a sense of what you’d want.  Cost is $3.99/lb based on the hanging weight, between 190 and 220lbs, plus the cost of requested smoking and sausage.  A typical whole hog at 200 lbs hanging weight plus the costs for smoking the bacon, perhaps 16 lbs, and getting 20 lbs of sausage would come out to around $835. Remember, these are unique animals and their hanging weights will vary a bit.

Buy a Half Hog!

At a price of $4.75/lb based on the hanging weight, this will net you half the meat relative to a whole hog purchase. A typical half hog at 100 lbs hanging weight plus costs for smoking bacon, perhaps 8 lbs, and getting 10 lbs of sausage would come out to around $495.

How does delivery work and how much pork can you fit in your freezer?

We will be able to deliver all of the pork at once and are happy to accommodate unique situations. A whole hog can fit in one regular size freezer.  A good rule of thumb is four cubic feet of freezer space for a whole hog and two cubic feet for a half hog.  For your mind’s eye, one milk crate is roughly one cubic foot.  NO additional fees, free delivery included to NH, ME, and MA.

What are the basic cuts of meat in a whole hog?

Hams x 2– 14-20 lbs each

Loins x2 – 12 lbs each

Bellies/Smoked Bacon x2 – 10 lbs each – You lose some weight if you have them smoked for bacon.

Spare Ribs x2– 2-3lbs each

Babyback Ribs x22 lbs each

Shoulder- Butt x2- 8-10 lbs each

Shoulder -Picnic x2- 6-8 lbs each

Sausage – 15 lbs – You can get any cut ground into sausage to increase your sausage total.

Why buy a whole or half hog?

The value that small-scale food producers add to this world begins and ends with folks getting inspired to create delicious meals for their friends, family, and community.  Meals made with fresh, high quality, and local ingredients are worth it on many levels and from many perspectives. Buying a whole animal is an investment in our farm and it’s a corresponding investment in your future self to get inspired to make great food.
